This boss is largely considered to be the hardest boss in Dark Souls 3. Be prepared to have some trouble with him and it is more than likely going to take a couple of attempts before you get him down. Don't be discouraged, and keep at it, you'll get him eventually. It is an optional boss though so, if you are having too much trouble with him, you can always skip him if you feel you have to. Let's get down to it then.
Step 1)Defeat his dragon.
For this first phase of the fight, you aren't even fighting the Nameless king himself, but the dragon he is riding on. Your biggest enemy during this phase of the fight is actually the camera rather than the boss himself. The target lock on is for the dragon's head which is constantly moving, so the camera is too. This can make it difficult to properly watch the boss to see what moves are coming, so you might want to consider not locking on to the target for this phase of the fight. The main thing to watch for is when he is landed and will breath fire at you, this is when you can roll through the fire to get some good blows in against him. Aim for the head to do the most damage and you'll also have a chance of staggering him and getting another blow in for some massive damage. Other than this attack, play defensively against him and always be ready to dodge, he doesn't have a lot of different attacks to watch for really.
Step 2)Battle the Nameless King himself.
He does mostly lighting based damage, so any gear you can equip to protect yourself from this is advised, and don't go in too overloaded with gear as you are going to need to match his speed with some quick rolling, because he is fast. Stay to his left and circle him, then roll to avoid any attacks and you should have enough time to land a blow, maybe two if your weapon of choice is fast. Don't ever try for three, no matter your weapon speed, it isn't as fast as you want it to be. Plan your attacks well and watch for openings, this is set to be a long battle as you will have to take your time, don't try to rush him down because it's not going to work.

Step 3)Be wary of his two new attacks.
Once you've gotten the Nameless King down to half health, he's going to bring two new tricks to the table. The first is a lightning strike attack where he will call down lightning from the sky. You'll need to either dodge this at the exactly perfect time, or block it with a shield able to withstand some good lightning damage. If you choose to block, it will drain all of your stamina, and probably still deal some decent damage. If you choose to dodge it and fail... You'll make a lovely lightning fried corpse. I'd suggest the shield. The other new attack is to charge into you, which cannot be blocked, and you can't roll to the side to avoid. Instead, you'll have to either roll towards him, or back. If he is aiming higher, dodging backwards isn't going to work either though, so it's best to just roll towards him, or keep in close to him so he can't charge at you in the first place.
With enough skill, and patience, you should be able to bring down this tough boss using these tips. Good luck!
