The Antec 300 is way underkill for the budget you've laid out. If you are going to get a 580 or dual 560's, then I recommend the NZXT Phantom. Best cooling, crazy good looks (kinda star wars, darth vader-ish), and it can fit ANYTHING. It's, in my opinion, the best mid-tower on the market.

6850, because it sucks less power, is faster, and is not going to bake your components and sound like a jet plane doing it.

If it's just BF3 you have in mind, then it's not a waste. DICE have said that they are developing Battlefield 3 for PC, and then porting it to consoles, instead of what we usually get (the other way around). So no, BF3 will be able to uti9lize all of the available hardware you have.

That's a solid build, outside of the extremely dated Antec case. That thing is a dinosaur. Get something like a 922 or a 912. Much better airflow (912 has the potential for more airflow)

I would recommend a different cooler than the V-8. Maybe a Megahalems or a NH-D14, or a Silver Arrow

Did you overclock ANYTHING? Because I have done this too, but then overclocked and wondered why nothing even blinked.

I'm having terrible lag spikes and my ping is all over the place on my built in LAN (Realtek). So I was wondering if any NIC will fix that, or do I need one of the Killer 2100 to help performance in games? Thanks :D

yes. at 1080p you only need 2x AA to get rid of all jagged edges, because pixel density should be higher, and that makes jagged edges harder to see. And your 5850 can handle that easily.
