It really depends. The i5 will outperform the 6300, but if the price difference can buy you a better graphics card, go for it. As far as Watch Dogs go, probably not. Watch Dogs is terribly optimized for PC, and dual Titans lag on ultra.

What do you guys think of this build? I'ts for gaming, and my budget is around $1000. I also a have a smaller question, will I need to add extra fans to my case, or are the ones that come with the case sufficient?

First off, the graphics card will fit fine, this is a full tower case, plenty of room. Second off, the case comes with fans which will be fine for now, you may want to add some more in when you crossfire, and the dimensions for the fans are Front fan 1x140mm, Top 2x200mm fan, Side 1x200mm and...

Good build, but a few things. First off, I'd get 8 gbs of RAM and get a well known brand like corsair or gskill, and do 1600mhz. Then I'd do a 500 gb hard drive, as that will be plenty, and save you some cash, and switch to caviar blue. That PSU is WAY overpriced, for this range I suggest...
