Tl;dr how much of a difference is the 2tb 7200.14 from the 1tb or 3tb?

For psu you dont want to skimp out. go with a quality seasonic (or some other brand, I really dont know much about them. Ask someone in the psu forum lol)

Seriously. Nvidia sucks. Amd is so much better. The only reason to buy nvidia is to get cuda acceleration (I have a 660 ti that I need for after effects/premiere), but even now a lot of companies (adobe specifically, woohoo) are switching to opencl

Yeah I don't see why people cant just mod the workstation (quadro ie) drivers to work with 680s and titans and stuff.
