Since I was not able to find a way to achieve what I wanted, I just decided to use a minimal Linux distribution. I took Bspwm Manjaro (https://manjaro.org/download/bspwm/). It is really lightweight (~200mb at boot) and I am able to run VM's with GPU pass through.
