I have all my parts except the CPU, can I assemble everything else first and then put in the cpu and cpu cooler?

On this build should I get an i3 8350k but not OC it (because my mono doesn't support it), or an i5 8400? I will be using it for gaming and other multitasking such as surfing the web and using Microsoft Office. Any other comments on my build in general? Thanks in advance...
