How do I setup a backup to a HDD? Is it a simple google search? Or is there's things I should look out for?

I think option 2 is for me?? Basically, if I can save on my SSD and have it automatically save on the HHD as well, I'll do that. But I would want to put things on to the HHD sometimes that I would not want on the SSD. Which is the best option for that?

The NVMe SSD is not the OS drive ... it's where I keep all short/medium term files for fast usage. (The OS one is mostly for programs). Yeah, I just want what ever is saved on the secondary NVMe to automatically save on my big HDD as well. I'll start and look into what you guys have suggested.

Oh I think you are right... the clock started playing up a few weeks ago... I bought a battery for the CMOS... but then didn't use it because the clock worked again. Thanks.(y) What other things can a CMOS battery affect?

Almost every time I turn on my PC from a cold, turned off at the wall, (no lights on) start, it keeps opening the "Megatrends" "Please press F1 to recover your BISO settings" page... and my previous BIOS settings are not there. This doesn't happen when I turn the PC on with an on at the wall...

I looking more for overclocking advice, rather than cooling advice. I mentioned the temperature spikes, incase that told someone something and the overclocking settings.
