Update: uninstalling Nvidia Experience (which was not even opening anymore) seems to have fixed the whole problem. I'll keep monitoring to see if the issue is truly gone and then I'll try to reinstall it and see if the problem comes back or not. So glad it seems to have nothing to do with...
