Gigabyte GA-78LMT-USB3. PSU was bought like a year and a bit ago

IU just installed my new GPU, Zotac GTX 1060 6Gb AMP Edition, its paired with my FX-8350 and a 500W PSU (EVGA 500W White 80 Plus). Would this be enough?

So, my GPU usually pumps out around 60fps in basically every game I've thrown at it, 1080p Medium and High on some games. It never goes above 66°C, and is at 100% usage too. But today it started stuttering, I use MSI Afterburner to watch what it does and it went from 100% to below 10% usage...

I have a Palit GTX 1050Ti 4Gb Stormx card, I'm using MSI Afterburner to OC, I can't increase voltage as this card relys on PCI/e slot power. But I still want to try and get as much as I can out of it. Any tips on how to find the stable point? Or a window of how much I can add?
