Need a good gaming/video editing montor

1440p, 27", 144hz refresh rate with g-sync for gaming and IPS panel for color accuracy. this is the only option for you right now and it's great: http://www.tomshardware.com/reviews/acer-xb270hu-27-inch-g-sync-monitor,4238.html

Which gaming headset should I buy? There is no limit... I was thinking about the Sennheiser p363d and the steelseries h wirele

do not pick gaming grade headsets, they are horrible! this is one of the best if not the best headset you can buy , and even if you do not care the mic is amazing: http://europe.beyerdynamic.com/shop/mmx-300.html

Do i need to upgrade my 500W PSU to get a MSI GTX 970?

no you will be more than ok with that one. with the 970 your system will draw about 250 watts and your psu delivers 400 at worst you are more than ok.

MSI GTX 970 upgrade to MSI GTX 980Ti

go for the 980ti , it is right now the best thing you can do. you should wait for more than a year till the next nvidia series gets on the market

how much of a bottleneck will the i7-870 be for the gtx 970 or gtx 980?

the i7 870 it's terribly unstable in new games, causing lots of stutter and frame drops. developers do not optimize games for older cpus so it's more and optimization issue than a real power problem. i would be against pairing it with the 970.
