Is there a reason why you are opting for an MX100 SSD instead of the more recent MX500 (which is also cheaper for the same capacity) ? If not, then I would suggest getting the latter, which is less expensive, more recent, and faster overall.
You will be just fine with 8Gb. You can always buy another RAM stick if you feel the need later on. Unless you start doing some heavy video editing (and not just some casual stuff), you shouldn't need more RAM.
The fact that you're asking about it tells me you're probably not a heavy RAM user...
