    It seems that clearing the CMOS solved this. A-XMP enabled + UEFI boot and my NVME is now showing up in both windows and BIOS...

    When I enable XMP in the bios the NVME still shows up, but its gone in the BIOS and windows after saving changes and rebooting.

    It shows up in both BIOS and Windows, but only if A-XMP is disabled from BIOS.
