I use hypee 212 for initial build testing as well quite frequently; but regardless getting 900+ Mhz OC on air with 4c8t is nothing to be dismissive of. Amazon has the updated version for $30

No way I would buy this vs a Hyper 212 Evo which $30 $12 cheaper and has excellent cooling (C2Q Q9650@3.8Ghz and i7 920@3.8Ghz with temps maxing at 79C ).

I doubt they do that; I'm guessing you'd have to do something like prime 95 or In that case all I can think of is something like Adobe After Effects, Photoshop, or some other video editing proram like MakeMKV.

If you are going to check GPU for artifacting; Unigine Heaven is great. For CPU stability I find Cyberpunk 2077 and Assassin's Creed Origins will let you know if it's unstable or not within a few hours. CPUz doesn't always identify an unstable overclock in my experience.
