I was originally wanting to go with a Ryzen 5 3600, but i swapped to a 2600X. Should I have went with the 3600? I was considering a 1660 super instead of a 2060 (better price to performance) but now i really can't decide. Any suggestions would be helpful.

Solution
My 2 biggest issues are the PSU and SSD. The PSU is easily the worst unit Seasonic has(made by a sub contractor) and the SSD isn't good either.

CPU: AMD Ryzen 5 2600X 3.6 GHz 6-Core Processor (£134.41 @ Amazon UK)
CPU Cooler: Deepcool GAMMAXX GT 29.5 CFM CPU Cooler (£34.99 @ Amazon UK)
Motherboard: Gigabyte B450 AORUS M Micro ATX AM4 Motherboard (£79.99 @ Box Limited)
Memory: Crucial Ballistix 16 GB (2 x 8 GB) DDR4-3200 Memory (£74.98 @ Amazon UK)
Storage: Crucial MX500 250 GB M.2-2280 Solid State Drive (£41.99 @ Amazon UK)
Storage: Seagate BarraCuda 1 TB 3.5" 7200RPM Internal Hard Drive (£34.29 @ Amazon UK)...
drop the cooler, its unnecessary.
a 2600X is slower than the 3600, but its only by around 13% and that is in both gaming and multitasking.
in gaming its more around 5%.
if you dont wanna drop the cooler, i would even suggest going to a 2600 non x and overclocking it to the same as the X varient.
same performance and a lil cheaper.

To save a bit you could easily drop the cooler and use the stock cooler.

Another option but it costs a bit more.
