I can buy i7 3610qm with 117 euros and i7 3820qm with 200. Is it worth paying the 83 euros more or not? My main uses will be gaming ( mostly blade and soul ) and some video edit.

The 3820qm provides 400mhz higher clock and tubo boost clock, which is a whole lot, however I am using a 2630QM which has just 2.0GHz and yet in gaming I have never found the need for more, but I haven't played new games, you might need it, especially when it comes to video editing. In my opinions if this laptop is going to be used long term (like more than 3-4 years) thne those 83 euros are worth it.

My current CPU ( i5 3210m ) goes max at 71-72 C in gaming. Would you think that the i7 can reach so high temps?

Depends on the room temperature.
In a hot climate country like mine the i7 3610 QM that I own can get up to 90 C with turbo boost.
After that it will downclock to stock speed of 2.3 GHz with temperature of around 80-84C.
This is based on my experience with i7 3610QM with Nvidia GT 650M.
