1 GTX 770 vs SLI GTX 770's

Hello, I am currently saving up for a gaming rig/render rig for personal use. I currently have this build

Please do not critique the build for I have chosen these components for a specific reason. The only thing I am questioning is should I go with ONE 770? or TWO 770's in SLI?
I will be running 3 monitors in 1080p or 1440p (havent decided on monitors) in Nvidia Surround gaming. I would appreciate the feedback on this. I have spoken to many people and they say 770 over 780 is because the 770 has more RAM. Then ive seen builds in where they use Nvidia surround with 2 770's instead of one.

For 3 monitors, 770 sli is needed, but may I suggest 1 GTX 780 Ti as it offers slightly better performance for a cheaper price.

always go with one card over two if you can unless of course you are buying flagship cards like the 780ti or 290x, then you can go duo card.
