I won't be downloading music (I have spotify), won't be downloading videos/movies, I will be downloading at least 10-12 games, I have a 256 SSD (Samsung 850 Evo) for my OS and to record videos.

Should I get a 1 TB or 2 TB hard drive? and if I chose to get a 1 TB hard drive will I be able to add another 1 TB hard drive later on? (Months after) without difficulties?

Depending on your PC you could be certainly might be able to add a second 1TB drive later without too much difficulty (you would need the free SATA cables and free space in your case for the drive).

I second SR-71's suggestion though, for not too much more money you could save yourself the hassle and be set for space with a 2TB drive.

Current prices at Amazon:
WD Black 1TB - $70
WD Black 2TB - $116
Twice the space, not twice the price.

Can you add another one later? Sure.
