You can ditch the cooler as the stock cooler is sufficient.
You dont need a OC board for a locked chip.
On a dual channel board, running dual channel RAM is optimum.

RAM is one of the most standard parts of the PC. At a specific speed, they all perform similarly due to the usually common die source amongst them.
At 1080p/60hz this should be a solid performer for quiet a while. Mostly medium/high settings at 60fps, but it will cary from game to fame.
