Solution
The Display Port monitor cable is the best one to use for 144Hz. HDMI is almost always not compatible with 144 Hz monitors. DVI dual link is also compatible.

I think that you could do two monitors at 1080P 144 Hz, but I doubt that you could do three (on the GTX 1070 & 1080). The GTX 1080Ti has enough ports (1 DVI dual link, 3 Display Port) bit I don't know if it will handle three 144 HZ monitors.

DisplayPort and DVI can be used for 144 Hz. HDMI not usually, but depends on the monitor. Just make sure you get a graphics card with 3 DisplayPort outputs and you'll be good to go (some manufactures put 2 DP and 2 HDMI instead of 3 DP and 1 HDMI).

I am familiar with two and three monitor setups. I even know of one setup with two 144 Hz monitors, but not three 144 Hz monitors. I know there are cheap 144Hz monitors now, but that sounds expensive. My 144 Hz monitor was just under $400. That is a lot to expect from one graphics card. The frame rates have to suffer for that application.
