So I have been on console my whole life and have finally decided to switch getting a PC to have a much smoother gaming experience. I'm wanting to mostly game online FPS such as Escape from Tarkov and Modern Warfare at a solid 1080p on ultra and a steady 120fps. Just wondering what the best (value for money also) build is to achieve this

You will get good 1080p gaming from this set-up IMO. I just picked a reasonably decent case but things like that are clearly at your discretion.
1660 Super GPU also an option as not much difference between that at the 1660ti.

Ryzen 3600X will give you best bang for buck at the moment within your budget. The Tomahawk Max board comes with the required BIOS update for the 3000 series Ryzen.

Alternatively, if you wanted more GPU grunt but still stay inside budget then swap the 3600X for the 3600 and the 1660ti for a 2060S and you can get

A steady 120fps in COD: MW on 1080p ultra isn't possible within your current budget. It requires a stronger gpu solution, and the ones a tier above what I posted in my list go a fair bit over budget.
I'm not going to worry about EFT, since that game is still in beta; things can change at any time.

-Motherboard needs a bios update first. It doesn't have a bios flashback feature either, so if the OP isn't able to get the vendor to update the bios for them before they receive it...
-RX 5700XT paired with what's a budget power supply; that's pushing it.
-You provided a performance metric to a game whilie it was in it's beta build.

it is good for high end gaming systems

Looks like the r5 3600 and rx 5700 xt in the full released version have more fps than beta one
