So I have a build with a i7 6700 (none K) 16GB 2x8 2666 MHz ram and originally a 1070. It's all running off a 500w EVGA white PSU. I have a chance to get a 1080ti sc black edition. Just wondering if it's ok to use the 500w psu for a couple weeks till I get a different psu.

It would be pushing it. However that depends on what else you have as well. If you have have a bunch of other components, then no. I would recommend not o use it yet. Do you plan on selling your 1070 or keeping it AND the 1080 ti? I would definitely recommend getting a 550 or 650w power supply.
