I have a Monoprice 27" Zero-G 1440p display that I was running on a GTX 1070. both monitor and GPU had DVI connections so a DVI to DVI cable allowed me to get to 1440p. The monitor only has VGA and DVI capability.
I recently bought a RX 6750XT which has 1 HDMI and several display ports. Bought a HDMI to DVI cable but now the monitor can only display up to 1080p. Does anyone know of a cable or adapter that will allow for 1440p? I'm beginning to suspect I'm dead in the water here.

Thanks for any help

Simple answer is before Dvi was dual link, now reduced to single link which isn't enough for 1440p 60Hz. You might see 1440p resolution listed if set Hz to 30, maybe.

Your best bet moving forward is an active dual link DP to Dvi adapter. Which can be pricey, nearing 100$ for a legitimate one not a fake. Could be a reason to consider buying a new monitor instead since one of these adapters is paying a good chunk of one.

All dual link Hdmi to Dvi (if advertised as such) are fake and only really single link.

See here;

Put in DP to Dvi, read through it and then see active dual link Dvi to DP adapter suggestions.
