16 gb or 8gb ram for gaming at 1080p and for video streming

How much fam do i need for gaming at 1080p and video streming. I have i7 4790k and asus gtx 970 strix

I'd go 16GB in a 2x8GB, there are already games that can eat up a 8GB set by themselves, and DRAM use by games will continue to grow

If i get 2 kingston hyperx fury 8gb 1866mhz ddr3 ram ( not the kit, seperate rams) can i run them in dual channel? And i have a deepcool assassin cpu cooler so will the kingston hyperx fury fit in the slot?

It might work, but it's not guaranteed. You generally want both sets of RAM to be as well matched as possible. I would just go with a kit. And dual channel kits are often cheaper than buying two DIMMs individually.

16 gb ram kits cost that much that i can buy 3 seperate ram sticks. Im talming about 2 same kingston ram sticks so can i run them in dual channel?

Get then in a single package so they have been tested to play nice together, no guarantees buying single sticks
