I currently have mismatched RAM sticks with one running in 1333 and another in 1600 and was planning to sell both of them to buy a single 8GB stick. Will the upgrade be worth it? or should I better be off saving up a little more in buying a newer system with better specs? Doing some heavy multimedia editing like Premiere, Photoshop, and After Effects.

Losing dual channel might not be bad IF you are getting more memory. In your case you are going from dual channel 8gb(2x4gb) to single channel 8gb, don't do it.

As to a new system, that depends on what you mean by 'heavy multimedia editing". For 4k? Hell yeah you want a new system. And 8gb ram is not enough. For 1080p? You are okay with what you have. Or to say it another way, if you need a new system to do what you're trying to, you'd know it. If your rendering time is driving you crazy, you need a new system.
