$2.5k Ultimate Gaming PC Build Help?

Hi community,
I'll start off my saying i live in AU so the currency is different to USD, now that we got that out of the way I would like to start off by saying my uses of this computer.

Gaming-I want to run every game at ultra settings with no lag AT ALL, I will mainly use this PC for FSX P3D Xplane 10 I would like to run these at max settings with no lag or any graphics card problem, I would also be adding Addons to FSX and P3D, I will be doing a triple monitor setup towards the future.

Editing-Random rendering and editing

I will be running 1440p on each monitor and my 2.5k budget will consist of the build and keyboard and mouse (I have a further budget for the triple monitor setup).

SO what i want from this helpful community is that i would like you to look at 2 of my build choices (both in AUD) and give me feedback.
