$2000 system and $1500 in monitor build? Come help!

So last year I kept $1500 from my tax money as I was going to buy a triple monitor setup. I later decided that I would skip that and opt for a Predator x34 monitor and a 27" monitor but realized my video card would not be able to handle it so I decided to hold onto the money until I could build a new system as well. That time has come.

Mainly the PC is used for game playing. I like to stream videos or watch Twitch while playing which is why I wanted 2 monitors. So I guess combined I have around $3000-$3500 to play with. I definitely want a Predator x34 monitor and another large monitor to watch stuff but everything else is up in the air.

What can you guys come up with? I prefer Intel and Nvidia and ideally I would like to have an SSD HD for OS and at least 4TB for data drive. Other than that, I am open.

Vapour, thanks so much. What is the deal with GPUs? This whole crypto mining crazy causing a shortage of them or something? I don't follow PC hardware trends so been out of the loop. Are we expecting prices to come down soon?
