$2000 to build a gaming PC

So I had a horribly bad experience with ibuypower trying to do a custom build which has lead me to decide I should just build my own pc from the ground up. I primarily play League of Legends which I know isn't terribly taxing, however I want to buy something that will go above and beyond that for the future.

Here's my first stab at what it could look like:

I'm thinking the new Skylake processor is the way to go, but I could definitely be convinced otherwise.

My budget is $2,000, but if I can come in under budget I won't complain. I haven't built a pc in quite a few years so i'm not up to date on current components, this was just what I thought seemed appropriate after 24 hours of research.

Curious about a couple things with this build:

1. Do you why only 8gb of memory? Wouldn't 16 be more appropriate for the long haul?
2. The 980 Ti seems like a great GPU, but if my monitors are only capable of 1080p, is that a waste?
3. Why an 850W PSU? Seems like overkill, but I want to make sure i'm not missing something.
