However when I looked up the RAM compatibility on the motherboard I noticed it only supported 2000MHz (OC) as the highest speed... Will this be a problem or will my RAM just downclock itself to that speed? or is there something else I might need to know?
running above 1866mhz also depends strongly on your cpu. you may not be able to run it at that speed even if you have an overclocked cpu.!there wont be any problem running it on lower speeds!
I'll be using a AMD FX-8350 so I think it should be able to handle 2000MHz on the RAM ;D

This will be my first ever gaming PC and I can't wait to go from my old PS3 to this! It'll be a huge jump and I can't wait to go from a choppy experience with poor graphics in BF4 to all maxed out 1080p and well above 60fps
