2500k vs 2600k

So I'm building a pc, and am stuck between the two. The computer will be used for high end games and general use. (also render video every now and then) if I get the i7, I could get the 6970, and if I get the I5 I could get the gtx 580 (same final price). Which option would be best in regards to the present and future? They both are quad core so I am sure they can handle multiple programs well. Also, would there be a huge decrease in performance WHILE RECORDING With fraps if I were to get the i5, since it doesn't have hyper threading apperantly

 
The I5 for gaming if that is the main use it equals the I7. The I7 has hyper threading and can run 8 threads simultaneously which can be beneficial for rendering, so how important is that? I do not know how much of a difference but if you are doing it on professional level then I would say I7.

It's really not that important, as it is just for a few YouTube videos and I could wait an extra few seconds, but what about general multitasking? Would the i7 only win in benchmarking and encoding/rendering?

OH i forgot, what psu would you reccomend for a 580, a 2500k, an sad as a boot drive and a 1 tb storage hdd? I ordered a cougar sx850 for 79.99 but I entered wrong billing info so I didn't get it so any recommendations?
