It will be just fine on 1440p 60Hz. You can check Tom's tests here. Personally, I wouldn't suggest 2560x1080 because not all titles support ultrawide resolution and you are going to see black bars on the sides. It would be much better to stick with 16:9.

Not sure about those monitors you linked, so it'd be better to wait for someone else to reply. However, I'd suggest to check this one out, too.

I have a 2550x1080p monitor at 144hz and gsync. A 1070 would be an excellent card for that. I only got 1080 for Oculus rift purposes. Otherwise you'll just enjoy 144 Hz with all the eye candy and still have some headroom with a 1070.
I can't recommend ultra wide monitors enough. Even though many games don't support 21:9 the ones that do more than make up for it. The ones that don't tend to be multiplayer competitive games like over watch.
Games like Elite, Rebel Galaxy, the division, Grim Dawn, star citizen all look fantastic on ultra wide.
