Right now I have 2 x 2 WINTEC AMPO 512MB. I am planning on upgrading to Vista from XP and I wanted to have at least 2GB of RAM for it. The three choices I am looking at are:

WINTEC AMPO 1GB (2 x 512MB) - $40 + $5 shipping
WINTEC AMPO 2GB (2 x 1GB) - $83 + $5 shipping
Crucial Ballistix 2GB (2 x 1GB) - $70

The Crucial looks like the obvious best RAM overall. However, would it be better to use 2 more sticks of similar RAM except for 1GB per stick? Or would $40 be better saved by just getting another 2 x 512MB?

If I got 2 x 1GB, I could take the old RAM out all together if that would be smarter.

I don't primarily game on the computer. I use it more as a general purpose PC and a lot of video encoding.

Also, I have my CPU OC'ed about 50%, but I set my RAM to 533 so that with the OC it is running at it's normal 800mhz speed.

One last consideration. There is a decent chance if I bought 2 x 1GB, that down the road the two pairs could get split up and the 2 x 512MB could go in another build as I cycle through upgrades.

Shouldn't make any difference if they are all the same speed, you may encounter issues when using all 4 slots on the board though. With that in mind it may be smarter to get a 2GB kit, then if there are any problems, you can just remove the 512MB modules and still have 2GB in the machine.
