3 monitor racing sim system

Hopefully I don't catch too much crap for becoming a member just to ask a question. I've been searching here and elsewhere for a while and can't quite find the answers I'm looking for.

It's been about 10 years since I built my last computer, so I'm not quite up on what is available, preferred, best value, etc.

This is a system I will be gathering parts for throughout the next month or 2

Here's what I'm aiming for:

$1600-$1800 (I can be talked into more, but that's my goal)

The systems sole purpose will be a 3 screen racing simulator rig

Existing screens are 3ea 24" Samsung (T24C550ND) 1920x1080 resolution HDTV's with HDMI inputs as well as PC inputs

I'm open to over clocking, water cooling, SLI, whatever. But I'm not interested in doing it just because it's cool. My biggest dilemma is with the GPU. I can't figure out if buying a single, more spendy unit, or running a couple cards is the way to go.

To run 3 monitors as a simulator, you'll need a top end graphics card. Those monitors are TVs so they'll present response time issues. And they only have hdmi input, so they'll present comms problems too.

A GTX 780Ti - http://www.geforce.com/hardware/desktop-gpus/geforce-gtx-780/specifications -
has One Dual Link DVI-I, One Dual Link DVI-D, One HDMI, One DisplayPort connectors and should run 3 1920 x 1080 monitors off dual link and dvi-d connectors.

Solution
Just to add to what's already been said; while Samsung likes to call them "HDTV monitors", those screens the OP has are actually good for response times (2ms G to G). Keep in mind though that the response time may only be that good when the screens are run in "Game Mode", which is an option in the settings that disables some of the post processing done by the monitor.
