Duel monitor: 1440 165hz & 4k 160 hz ?

Altho being an high quality psu (especially if it's the serie post 2018) i would suggest you looking into the 850, just to be completely safe.

Also, i hope you're planning to update that cpu too, because a 6th gen would SEVERELY bottleneck a 3090, even at 4k.

Yes that will be fine. A 650 or 600 RM series would also be fine. The 750 would probably be slightly cheaper to run over the long term and last longer.
