32GB or 64GB for Skylake?

Hello, I'm currently deciding on which RAM to get right now, to upgrade from my existing 8x8(16GB) HyperX Black Fury 2666MHz DDR4 build, and I've got two options:
1. Upgrade from the 16GB to 32GB with my existing HyperX RAM, or
2. Buy a set of 16x16GB RAM in a set of 2 for now, but this is because I would then be able to upgrade to 64GB in the future; having the ability to do so if desired.

(Is this RAM even compatible with Skylake)?

Considering I don't really do much video editing/rendering, blender, photoshop, mainy gaming, the upgrade from 16GB does seem kind of pointless, but being that my build is Skylake and 64GB is the max available RAM you can go to, it maybe worth maxing out the RAM and getting it out of the way; while also improving system performance and render time for other projects in the future, but it's difficult to decide on what to do.

What would be the ideal course of action right now, or would it just be better to leave the RAM for now, and SLI my 980 Ti in the future instead?
Also, would it make much of a difference going from 2666MHz to 3000MHz?

Don't touch ram until it becomes a problem in my eyes. Better go SLI on your 980ti, better invest in a monitor, in a mouse, keyboard, anything but ram. Won't give you a performance you will notice. Also ram tends to get cheaper with every month so no point in getting it now.
