Question 3440x1440 monitor stuck at 1920x1080 after driver update

Last night I built a Ryzen 3-based rig for a co-worker. The only PC monitor I had available for setup was my gaming monitor, which is a 34" 3440x1440 display.

Everything was going flawlessly. First boot was perfect. Win10 Pro install went off without a hitch. Installing the motherboard drivers (Gigabyte B40M DS3H) went smoothly, too. And the whole time, the system auto-detected the 3440x1440 display and was utilizing the entire screen.

And then I installed the AMD "Adrenalin" drivers for the integrated Vega 8 GPU, and things went downhill.

Now, the display maxes out at 1920x1080, leaving black bars on either side. Windows doesn't seem to think the connected display can go any higher. I've tried uninstalling the AMD drivers, reinstalling them, but to no avail.

This obviously won't affect my co-worker, since they will be using a standard display with this box. But for my own sanity, I'm stumped as to how to solve this issue.
