I am putting together a build with either the GTX 780 or 780 ti in dual SLI.
My question is this:
Is a 3GB card enough for 1200p gaming, or is more recommended?
Just found a good deal on a 1440p monitor.
Would the same be true with a 1440p monitor?

more vram won't help with a 1440p, but will help if you go 4k or add more monitors, for one single 1440p monitor for the foreseeable future, a good 780 ti or sli 780 3gb will be good enough

Im going 1440p with a 2Gb GTX 680, so hoping you dont need 3gb+ for most games. Im sure if you dont go crazy with AA (which you dont need to at 1440p) then it will be fine.
