Among recent eBay purchases I lucked into a cheap box of Grey Knight
Terminators, and per the nifty conversion pics Donovan posted back in
November, I am going to field these as Word Bearer Chosen Terminators. But
now I need to decide what use they're best fitted for so I can decide want
CSM Termie arms to order and slap on them. I'm trying to decide if I should
set them up as anti-armor with a lot of chainfists and say 2 combi-meltas;
power-armor killers with more lightning claws, or some kind of mixed-bag
troop.

Right now here's how I'm thinking about running them:

-Asp Champ with Lightning Claws, combi-melta
-Reaper autocannon/power mace (just because I think they look good together)
-combi-melta/chainfist
-2xcombi-bolter/chainfist

The Word Bearers army I'm building is VERY infantry-biased, which makes me
think I should plan on an anti-armor role for these Termies and deep-strike
them near enemy armor. But on the other hand, I already have 10 Daemonettes
with rending claws and a unit of Havocs I could try and use to kill tanks.
Any advice here would be very helpful, as I haven't really got a clear idea
on how to set these guys up and use them to their best advantage.

Thanks,

I'd go for the Counter-Assault role. Tool them up for hand to hand
anti-power armor with a mix of power weapons or lightning claws and
power fists, possibly a chain fist thrown in for the occasional tank or
dread that makes it to your rear areas.

Deep Striking would be an option in table quarters missions, but most of
the time I'd just set up in the rear in the middle and prepare to
bolster one flank or the other.

nothing worse than a tank in the rear area.
