I should be purchasing it all within the next month or 2. I will be using it mainly for gaming. Currently I have a 1080p monitor but will eventually upgrade to 4K when the price drops a bit more.

My budget is ideally below $3000 AUD. There are a few shops in driving distance from me that I can pick up all the parts I have selected from.

I also plan on overclocking my system and might grab a second card when it is more affordable.

My main concern is have I gone overkill with the PSU even if I do buy a second card. Any feedback will be great.

Nice build, I would personally get a samsung 850 evo in the same size as my boot disk and as for whether your PSU is overkill for two cards depends on whether you plan on overclocking or not, if you aren't then you're fine. If you are overclocking, I would go with a 1000W PSU instead, I would stick with the evga G2 offerings anyway

Well if I get a second GPU it will bring my TPD to roughly 720W. How much headroom would I need to get a decent overclock on the CPU and 2 cards do you think?

Is there any specific reason why you would pick the evo over the hyperx?

I would strongly suggest having at least 250W headroom, as a decent overclock on all those items way well lift the power consumption by 200W, so you may well want to consider even going to 1200W PSU if you are planning on large overclocks.
I chose the evo over the hyperx as the samsung is the better unit and if my memory serves me correctly, has a longer warranty

Ok, I did some research on the HyperX and I can see what you are saying. It's a bit more expensive but the speed is superior for the difference. I think I might stick with the 850W PSU for now though, as I probably won't want to OC anything other than my CPU during the Australian summer.
