5 Screen Gaming Build

I built a 3 screen rig about 10 years ago, when the Matrox TripleHead2Go was just getting started. The first time I walked out of the sewers in Oblivion in 3840x1024, I was in absolute heaven. I decided then and there that my desktop would run multiscreen permanently.
Then I got a wife, and long story short, my gaming and 3 screens found their way into a storage shed, never to be used again. Since then I've had to game on a small 13" laptop when she's not around.

Fortunately, I got rid of the wife!
Unfortunately, my system is so outdated that its hardly usable.

So, I'm hoping to get a few pointers on the updated equipment, and to see what you guys think as far as a new system goes. I have read a few other builds on here, and here's what I've come up with so far:

My custom Lian Li case and 1k power supply I'm going to salvage from my old rig, the 3 HDs will run RAID5 like my ancient x4 150GB drives did. It is water cooled, but as far as hardware goes, these are complete guesses as to what I will require. I would love some advice in that department.

I intend to be able to run Skyrim and EVE on max settings at 5x1 screen portrait mode (7200x2560 resolution). I know its an odd 45:16 aspect ratio, but I'm not sure how to fix that. If I could get the rig to run TW:Rome at 60 FPS at that resolution, I would be in heaven. Of course, if I'm overpaying for a piece of hardware, I'm open to suggestions. Are there any obvious bottlenecks?

EDIT: The screens show as $0 because I wanted to check the cost not including them. I have not purchased them yet. I'm open to suggestions on those as well.

I understand I need to buy a MST Hub to get all 5 screens going, but I can handle that later after the CPU itself is built.
 


Well, 3 screens doubled my work efficiency, and since I'm using it as a tax write off for that, I figure why not? 3 was good, so I'm hoping 5 will be great. Worst case, I'll build put two screens over the main 3, and switch to landscape mode so I'll have charts and reference materials available without wasting workspace.

For gaming purposes though, it should be obvious.
