I'm looking to achieve its standard boost clock (1708MHz) and possibly higher. Would the EVGA 500B be sufficient for that?

If you have to ask, the answer is no.

Average current wise the 500B should be fine, but if you overclock I highly suggest stepping up to a EVGA G2 550, it's not even a third the price of that GPU
