Hi I am planning on the configuration mentioned in the title. Any objections to such a config? What kinda CPU / GPU temps are we talking about here?

No one can accurately answer this.
Room ambient - air conditioning, no air conditioning
Chassis ambient
Fans being used
Fan placement
Fan curve idle and under load for all fans, including gpu
Bios settings - AMD specified, vendor custom, user custom
Windows power plan
Background activity, whether Windows or any other 3rd party apps you may install
^Quite literally all of that, and perhaps more... all of that is going to have an influence.
