600W enough for my build with a 1060?

You can get by with a good 450W PSU (Such as the Seasonic G-450). For more headroom you can get the 550W version (Seasonic G-550) or the EVGA SuperNOVA G3 550W or G2 550W -- both are more than enough for your rig.

600W is slightly an overkill - but is MORE than ENOUGH. Not to mention that your EVGA 600B is slightly less efficient than the SuperNOVA G3 or G2 versions.

More than enough. the 1000 series of NVIDIA GPU's are super efficient on energy. But i would recommend staying with a 600W PSU. It's pretty healthy to keep it moderately above the usage it's going to be using. Not too high, not too low. I think 600W would take you far, and if you ever get upgrades later on, you won't be worrying about PSU. Also, maybe a Corsair PSU, just from personal experience. I've had nothing but good luck from them. What ever is in your budget or preference though.
