60fps stable on 60hz VS unstable on 120hz

I just bought a i7-8700k with a gtx 1080. I have a good 1080p 60hz monitor bought 3 years ago. My new specs could push more than that but would I see the difference? My question is: is it best to have a stable 60 fps on a 60hz with everything maxed out or have occasional drops to 75-90 fps on a 120hz monitor?

If you can get 100+ fps most of the time I'd say a 120 Hz monitor would be a better experience.
