I'm currently looking at both chips on Microcenter and they have some really good prices right now. You can get a 6800k + meh motherboard for $490 or a 6700k + awesome motherboard for $430. I'm debating between those two options deeply currently, I would like to mostly play video games, but also enjoy doing a decent bit of video editing/rendering/streaming/animation so what I'm not an expert on the topic, so I'm wondering is if the 6800k is worth $100 more ($60 more with a rebate) than the 6700k in those areas. I'd also like to know which in particular would have better performance in Minecraft (I know it's random but I'm curious as some have told me more cores is better and others have told me better clock speed is better for minecraft so any info would be awesome) Thanks!

Skylake beats out Broadwell E in gaming. The rendering/streaming/video editing would be useful with Broadwell E, however. Imo, the 6700k would be the better choice. You get two less cores, but Skylake is better for gaming and with a good motherboard you can easily overclock it.

Specific to minecraft, higher clock is better. Minecraft is not well threaded enough to use 12T. And it depends on how you play minecraft, but on Vanilla I get around 300FPS, once I throw in mods it goes down to around 40FPS. I never hit close to 100% usage on my CPU or GPU unless I toss shaders into the mix, at which point my GPU usage goes up, but that's the only point.

I personally have a 6700k, and I highly recommend it, especially for Gaming. I play CPU intensive games such as Arma 3, and I have to say, it's mind blowing. I also do video editing and rendering, and it is great. The 6800k might be better for rendering, but the 6700k definitely does its job, nothing to complain about. Minecraft runs on multiple cores, so let's say you have a quad core CPU like the 6700k, it would be set to use all 4 cores (Higher Clock Speed). And if you were to run on a 6 core like the 6800k, it would be set to run on all 6 cores . Considering that you can get a 6700k not only with a much better motherboard but with a better price tag, I would go with the 6700k :). But they would both run very good, and the 6800k might even be better for your purposes.

To sum it all up:
6700k - 4 cores, higher clock speed, faster single core speed, cheaper with better motherboard.
6800k - 6 cores, slower clock speed, slightly slower single core speed, better workstation CPU (Rendering) slightly more expensive with a worse motherboard.

In the end, it is up to you to analyze all of this, and make a better and wiser choice :)
 
With the launch of Intel Kaby Lake and AMD Zen chips right around the corner, now is a good time to get a deal on the Broadwell/ Skylake CPU's. I personally would go with the 6800k... while it is slightly slower in gamin FPS (the difference is minimal), the 6800k is a much more powerful CPU for your other applications.

AMD Zen and Intel Coffee Lake will push software developers to adopt a more multi core approach to coding (greater than 4 cores). If I where you, I would go with the 6800k.
