I have little actual experience with 8, though from what I've seen of it, I dislike it. All the same, is the better processor (and ~$30 lower price) worth "upgrading" to 8 when I get a new laptop?

Windows 8 is almost the same as 7 if you kill the blocky start screen and put back the start menu. I actually prefer it over windows 7.

I used classic shell to do both.

Go with the better hardware. 8 should not be a deal killer unless you're getting a touch screen which makes it much more fun and gives you the real experience. I have two touch screen Win XP's (Work) and the touch feature is very cool. I can only imagine how much better it has gotten with 8. To sum it up it up Win 7 and 8 are very similar so get the better hardware laptop.

Thanks. From what I've read, though, there is only a marginal difference between the two processors, and the price difference is only about $20, favoring the Win 7 laptop. I guess I'm leaning toward the Win 8 laptop, but I wanted to get some other opinions, especially if there was a really good reason to stick with Win 7, other than aesthetics.
