For mining it could work since your not using the full power of the cards.It’s a Corsair gold psu. I’m using the amd gpu for mining but otherwise gaming would from the 3070. Also when I’m mining and overclocking my 3070 I’m only using 150-170w

With just the cards your at 450 watts or more depending on the model of the cards.
750 watt has nothing to do with it their a bunch of them that would go up in smoke trying to pull 500 watts from it. PSU's are very poorly regulated.
You would need to list all the parts but mixing the cards like that you can also run into driver issues.

The drivers could still be a problem (i'm not a miner so not completely sure on that)
In general if your total TDP is around 600 watts it could work but I would be leery of running the PSU higher than that all the time.
EDIT when mining you could also underclock and volt the CPU if you have a power thirsty CPU.
