So I am not the brightest kid on my block. Can I build a AMD gaming rig and still use this "80GB Intel X25-M solid-state disk (SSD) drive" for my hard drives or is this just for Intel ? If it is do they make some for AMD also ?
So I am thinking I could run both on my system. May be a 160GB Intel X25-M solid-state disk for the OS and programs and also a HHD for storage of movies ?

Running both SSD and standard HDD is probably what most people do to get the best results with minimal cost. Anyway most multimedia files are usually sequentially read and sequential read is something modern HDD can compete even with SSD.
I have an AMD Phenom..and 2 intel 80 gb g2 connected in a raid 0...works just fine..and has been the best investment I have ever put into my PC...Like going from vhs to blu ray
