8700k - 2400MHz vs 3000MHz

Still doesn't benefit as much as Ryzen does, but if you have the $$$, go for it. It only costs a little more, until you get to 3600+, then prices get even more stupid.
As for youtube videos, unless you have the same setup(part for part) and environment(the condition of the room, ambient temps) as the Poster, don't expect the same results.
I already have 2666, so it would be a huge waste to get 3200mhz for a likely unnoticeable performance increase.

There are gains to be had, but they are small and maybe not worth the money, especially if you already have the slower RAM.
If you have an 8700K & a 1080Ti it may be worth going for 3000 or 3200 RAM, if you have a lesser graphics card you'll likely never notice the difference.

That's for gaming, there are probably some specific programs that would gain some performance apart from that.
