i am looking for a cryorig cooler that could cool an 8700k and keep it under 75 or 80 degrees celsius while under load. it needs to fit NZXT H500i and needs to be compatible with asus strix z370-e. It does not need to be overclocked but i would like to know if a cryorig cooler that is compatible with the parts above and if it could keep it under 75 degrees under load while at 4ghz or something

That will vary from game to game. Some games can gain on FPS with OC, some dont. Depends on which games you are playing. But for the most part, the stock clocks of 8700k are good enough to drive most games on ultra @1080p with a 1070. Even if some games gain from OC, it will be mostly negligible. We are talking like 140fps vs 150fps. Anything above 100fps is mostly not noticeable to the naked eye.

Its hardto tell if it would fit without the internal clearance height as cryorig coolers are pretty tall

Cryorig H5 and H7 will fit that case. But they are not meant for huge OCing. 4ghz is fine, they should be able to handle that. But if you plan to push for 4.5 and above, you will need the R1. Unfortunately the R1 wont fit that case.
I would rather go for a full tower, as the 8700k needs serious juice like big cooler and enough airflow for extreme clocks.
