I've got a MSI z87 Mpower Max MB and I just cloned my Samsung 850 Pro to my new 970 Evo. It's totally functional, but I can't select it or see it in the BIOS. I'm using "EZDIY-FAB PCI Express M.2 NGFF PCI-E SSD to PCIe 3.0 x 4 Host Adapter."

You almost certainly can't boot from that drive in that PCIe adapter.
The Z87 boards came out well before NVMe drives were a thing. It does not know how to boot up from that drive.
Unless there has been a specific BIOS update to change it on that specific motherboard...this will not work.
